Just down the street from the Capitolio in Havana sits El Floridita, an elegant, timeless bar that proudly calls itself La Cuna del Daiquiri (The Cradle of the Daiquiri).
Opening its doors in 1817, it wasn't until the 1930s, under the meticulous guidance of legendary head bartender Constantino Ribalaigua Vert, that El Floridita secured its place in cocktail immortality. Constantino, often called 'El Rey de los Coteleros', perfected the frozen Daiquiri, elevating it from a simple rum sour to a sophisticated, icy masterpiece.
The Hemingway Connection
El Floridita was famously the favorite watering hole of Ernest Hemingway. He was known to consume staggering quantities of his own custom variation, the Papa Doble—a double Daiquiri made with grapefruit juice, maraschino liqueur, and absolutely no sugar.
Today, a life-sized bronze statue of the author sits at his preferred spot at the end of the mahogany bar, watching over the cantineros as they elegantly toss cocktails in the air and blend ice to a perfect, snowy consistency.

Visiting El Floridita today is like stepping back into the glamorous 1950s. The bartenders still wear sharp red jackets, the air conditioning provides a luxurious escape, and the Daiquiris remain the gold standard against which all others are judged.
